Ingredients

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 1 cup strawberry jam
  • 1 egg, beaten (for egg wash)
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)
  • 1/2 teaspoon vanilla extract (for icing)


Instructions

  1. In a large bowl, mix together the flour, salt, and sugar.
  2. Add the diced butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the ice water, a tablespoon at a time, until the dough comes together.
  4. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out one disc of dough on a floured surface to about 1/8 inch thick.
  7. Cut the dough into rectangles and place half of them on a baking sheet.
  8. Spread a tablespoon of strawberry jam on each rectangle, leaving a border around the edges.
  9. Top with the remaining rectangles and seal the edges with a fork.
  10. Brush the tops with the beaten egg.
  11. Bake for 20-25 minutes or until golden brown.
  12. While the tarts cool, mix the powdered sugar, milk, and vanilla extract to make the icing.
  13. Drizzle the icing over the cooled pop tarts and let set before serving.

Notes

  • For a flakier crust, ensure the butter is very cold.
  • You can substitute the strawberry jam with any other fruit jam of your choice.
  • These pop tarts can be stored in an airtight container for up to a week.
