Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Place the chicken thighs on a sheet pan and surround them with the seasoned potatoes.
- Drizzle a little more olive oil over the chicken and season with additional salt and pepper.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are golden brown.
