Description

A delightful and easy-to-make casserole that combines all the flavors of a traditional Reuben sandwich.


Ingredients

Scale
  • 1 loaf of rye bread, cubed
  • 1 pound of corned beef, sliced
  • 1 cup of sauerkraut, drained
  • 1 cup of Swiss cheese, shredded
  • 1 cup of Thousand Island dressing
  • 4 large eggs
  • 2 cups of milk
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cubed rye bread, corned beef, sauerkraut, and Swiss cheese.
  3. In another bowl, whisk together the Thousand Island dressing, eggs, milk, salt, and pepper.
  4. Pour the egg mixture over the bread mixture and stir to combine.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 45-50 minutes, or until the top is golden brown and the casserole is set.
  7. Let it cool for a few minutes before serving.

Notes

  • For a vegetarian option, substitute corned beef with mushrooms or tempeh.
  • Can be prepared a day in advance and baked just before serving.
  • Serve with extra Thousand Island dressing on the side.
