Instructions
- In a saucepan, bring chicken broth to a boil.
- Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
- In a skillet, heat olive oil over medium heat and cook the diced chicken until golden brown and cooked through.
- In a large bowl, combine the cooked couscous, chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Drizzle with lemon juice, and sprinkle with oregano, salt, and pepper. Toss to combine.
- Serve warm or chilled, as desired.
