Ingredients

  • 2 tablespoons unsalted butter
  • 3 large eggs, separated

  • 1 cup fresh raspberries
  • 1/2 teaspoon vanilla extract

Instructions

  1. Melt the dark chocolate chips and butter together in a double boiler, stirring until smooth.
  2. In a separate bowl, whisk the egg yolks and sugar until pale and creamy.
  3. Fold the melted chocolate mixture into the egg yolk mixture.
  4. In another bowl, whip the heavy cream until soft peaks form, then fold it into the chocolate mixture.
  5. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form, then gently fold into the chocolate mixture.
  6. Layer half of the mousse in a serving dish, followed by a layer of fresh raspberries, then top with the remaining mousse.
  7. Chill in the refrigerator for at least 4 hours before serving.
