Instructions
- Melt the dark chocolate chips and butter together in a double boiler, stirring until smooth.
- In a separate bowl, whisk the egg yolks and sugar until pale and creamy.
- Fold the melted chocolate mixture into the egg yolk mixture.
- In another bowl, whip the heavy cream until soft peaks form, then fold it into the chocolate mixture.
- In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form, then gently fold into the chocolate mixture.
- Layer half of the mousse in a serving dish, followed by a layer of fresh raspberries, then top with the remaining mousse.
- Chill in the refrigerator for at least 4 hours before serving.
