Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste


Instructions

  1. In a large pot, brown the ground turkey over medium heat until fully cooked.
  2. Add the chopped onion, garlic, and bell pepper to the pot and sauté until softened.
  3. Stir in the chili powder and cumin, cooking for an additional minute.
  4. Add the diced tomatoes, kidney beans, black beans, corn, and vegetable broth to the pot.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
  6. Season with salt and pepper to taste before serving.
