Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  2. Add crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper. Bring to a simmer and cook for 20 minutes.
  3. In a bowl, mix flour, baking powder, garlic powder, and parsley. Stir in milk and melted butter until just combined.
  4. Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and cook for an additional 15 minutes.
  5. Stir in shredded cheddar cheese until melted and combined. Serve hot.
