A delightful plant-based cake bursting with mixed berries, perfect for celebrations and sweet moments.
Ingredients

- 2 cups flour
- 1 cup sugar
- 1 cup almond milk (or any plant-based milk)
- 1/2 cup vegetable oil
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup mixed berries (fresh or frozen)
- 1/2 cup berry jam
- 1 cup vegan butter (or any plant-based butter)
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons almond milk (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease two round cake pans.
- Mix together the flour, sugar, baking powder, and salt in a bowl.
- Combine the almond milk and vegetable oil in another bowl.
- Mix the wet ingredients into the dry ingredients until just combined.
- Fold in the mixed berries.
- Divide the batter between the two prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool completely.
- Carefully remove from the pans and place one layer on a serving platter. Spread berry jam on top.
- Place the second layer on top.
- Beat the vegan butter until creamy, then gradually add powdered sugar, vanilla extract, and almond milk until the desired consistency is reached for the frosting.
- Frost the top and sides of the cake.
- Decorate with additional berries if desired.
- Serve and enjoy for special occasions!
Notes
Use room temperature ingredients for a smoother batter. Avoid over-mixing to keep the cake fluffy.
