Description

A delightful plant-based cake bursting with mixed berries, perfect for celebrations and sweet moments.


Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 cup almond milk (or any plant-based milk)
  • 1/2 cup vegetable oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup mixed berries (fresh or frozen)
  • 1/2 cup berry jam
  • 1 cup vegan butter (or any plant-based butter)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons almond milk (for frosting)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease two round cake pans.
  2. Mix together the flour, sugar, baking powder, and salt in a bowl.
  3. Combine the almond milk and vegetable oil in another bowl.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the mixed berries.
  6. Divide the batter between the two prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. Let the cakes cool completely.
  8. Carefully remove from the pans and place one layer on a serving platter. Spread berry jam on top.
  9. Place the second layer on top.
  10. Beat the vegan butter until creamy, then gradually add powdered sugar, vanilla extract, and almond milk until the desired consistency is reached for the frosting.
  11. Frost the top and sides of the cake.
  12. Decorate with additional berries if desired.
  13. Serve and enjoy for special occasions!

Notes

Use room temperature ingredients for a smoother batter. Avoid over-mixing to keep the cake fluffy.
