Ingredients

- 8 ounces pasta (e.g., rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- Combine in a large bowl the pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese.
- Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a separate small bowl.
- Pour the dressing over the pasta salad and toss to combine.
- Serve chilled or at room temperature.
Notes
Best if made a day ahead to allow flavors to meld together.
