Description

A refreshing and nutritious salad featuring penne pasta, feta cheese, cranberries, and a zesty orange vinaigrette.


Ingredients

  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1 tablespoon honey
  • Salt and pepper to taste


Instructions

  1. Cook the penne pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled penne, feta cheese, cranberries, red onion, and parsley.
  3. In a separate bowl, whisk together the olive oil, orange juice, honey, salt, and pepper.
