Description

A nourishing fall delight packed with seasonal ingredients.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup roasted sweet potatoes, cubed
  • 1 cup kale, chopped
  • 1/2 cup cranberries
  • 1/4 cup pumpkin seeds
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • Salt and pepper to taste


Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.
  3. While the quinoa cooks, preheat the oven to 400°F (200°C) and roast sweet potatoes for 25-30 minutes.
  4. In a large bowl, combine cooked quinoa, roasted sweet potatoes, kale, cranberries, and pumpkin seeds.
  5. In a small bowl, whisk together olive oil, maple syrup, salt, and pepper. Drizzle over the bowl and toss to combine.
  6. Serve warm or at room temperature.

Notes

  • Feel free to add other seasonal vegetables.
  • This bowl can be made ahead and stored in the fridge for up to 3 days.
  • For added protein, consider adding chickpeas or grilled chicken.
