Description

A delightful fusion of Cajun and Creole flavors, Gumbo Fried Rice brings together smoky sausage, succulent shrimp, and colorful vegetables in a comforting dish.


Ingredients

  • 1 cup Long Grain White Rice
  • 1.5 cups Chicken Broth
  • 1 cup Kielbasa or Andouille Sausage
  • 1 cup Shrimp
  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 2 stalks Celery
  • 3 stalks Green Onions
  • 2 tablespoons Creole Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Turmeric
  • Salt to taste
  • Pepper to taste
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 Eggs


Instructions

  1. Rinse the long grain white rice under cold water until the water runs clear.
  2. Combine the rice and chicken broth in a medium saucepan.
  3. Bring to a boil, cover, and reduce heat to low.
  4. Cook for about 18–20 minutes, or until rice is tender.
  5. Remove the rice from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.
  6. Heat 3 tablespoons of Extra Virgin Olive Oil in a large skillet or wok.
  7. Add the diced onion, bell pepper, celery, and the white parts of the green onions.
  8. Sauté for about 5 minutes, or until vegetables soften.
  9. Stir in the sliced sausage and shrimp, cooking until the shrimp turns pink, about 3-4 minutes.
  10. Add the cooked rice to the skillet.
  11. Sprinkle the Creole seasoning, garlic powder, ground turmeric, salt, and pepper over the top.
  12. Mix well until all ingredients are combined and heated through.
  13. Create a well in the center of the skillet and crack the eggs into it.
  14. Scramble the eggs until fully cooked, then incorporate them into the rice mixture.
  15. Finish by adding the green tops of the green onions, combining them into the dish.

Notes

For added depth of flavor, consider smoking the sausage before adding it. Use leftover rice for best results.
