Ingredients

  • 4-5 lbs corned beef brisket
  • 1 can (12 oz) Guinness beer
  • 1 onion, quartered
  • 2-3 cloves garlic, minced
  • 2 carrots, sliced
  • 2-3 potatoes, quartered
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon black pepper
  • 2 bay leaves


Instructions

  1. Preheat oven to 300°F (150°C).
  2. Place the corned beef brisket in a large Dutch oven.
  3. Pour the Guinness beer over the brisket.
  4. Add onion, garlic, carrots, potatoes, brown sugar, Worcestershire sauce, black pepper, and bay leaves.
  5. Cover the pot and roast in the oven for 3-4 hours, until the meat is tender.
  6. Remove the brisket, let it rest, then slice and serve with the vegetables.
