- 1 lb ground beef
- 2 medium zucchini
- 1 cup shredded mozzarella cheese
- 1 cup tomato sauce
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Slice zucchini into thin rounds and lay them on paper towels. Sprinkle with salt and let sit for 10-15 minutes to draw out moisture. Pat dry.
- Heat olive oil in a large skillet and sauté onion and garlic until softened.
- Add ground beef to the skillet and cook until browned.
- Stir in tomato sauce, Italian seasoning, salt, and pepper. Let simmer for 5-7 minutes.
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Layer zucchini rounds on the bottom, top with a layer of beef mixture, and repeat layers.
- Sprinkle shredded cheese generously over the top.
- Bake for 25-30 minutes until cheese is bubbly and golden.
- Let cool for 5 minutes before slicing and serving.
