A comforting and low-carb casserole that layers ground beef, zucchini, and cheese for a delicious meal.


Ingredients

  • 1 lb ground beef
  • 2 medium zucchini
  • 1 cup shredded mozzarella cheese
  • 1 cup tomato sauce
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Slice zucchini into thin rounds and lay them on paper towels. Sprinkle with salt and let sit for 10-15 minutes to draw out moisture. Pat dry.
  2. Heat olive oil in a large skillet and sauté onion and garlic until softened.
  3. Add ground beef to the skillet and cook until browned.
  4. Stir in tomato sauce, Italian seasoning, salt, and pepper. Let simmer for 5-7 minutes.
  5. Preheat oven to 375°F (190°C) and grease a baking dish.
  6. Layer zucchini rounds on the bottom, top with a layer of beef mixture, and repeat layers.
  7. Sprinkle shredded cheese generously over the top.
  8. Bake for 25-30 minutes until cheese is bubbly and golden.
  9. Let cool for 5 minutes before slicing and serving.
