A simple and delightful dish featuring fresh zucchini grilled to perfection with parmesan and fragrant herbs.
Ingredients

- 2-3 medium zucchini (about 1 pound / 450 grams), firm and fresh
- 2 tablespoons extra virgin olive oil
- 2 cloves fresh garlic, minced
- ¼ cup grated parmesan cheese
- 2 tablespoons fresh herbs (a mix of chopped rosemary, thyme, and basil)
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 1 teaspoon lemon zest (optional)
Instructions
- Rinse zucchini and trim the ends. Cut into ¼-inch thick slices lengthwise.
- Combine olive oil, minced garlic, chopped herbs, sea salt, and black pepper in a mixing bowl. Stir well.
- Add zucchini slices to the bowl and gently toss to coat. Let sit for 5-10 minutes to absorb flavors.
- Heat a cast-iron grill pan over medium-high heat.
- Arrange zucchini slices in a single layer on the grill. Cook for 3-4 minutes per side until tender.
- Sprinkle grated parmesan over zucchini while on the grill. Cover to melt cheese for 1-2 minutes.
- Remove from pan, optionally sprinkle with lemon zest and extra herbs, and serve warm.
Notes
Serve immediately for the crispiest texture. Grill in batches if using a lot of zucchini to avoid steaming.
