Ingredients

  • ¼ cup olive oil
  • 2 tablespoons hot honey
  • 1 teaspoon freshly grated lemon zest
  • 6 ears of sweet corn, kernels removed from the cob
  • ¼ cup sour cream
  • 2 tablespoons freshly squeezed lime juice
  • Kosher salt and freshly ground black pepper, to taste


Instructions

  1. Whisk together olive oil, hot honey, lemon zest, minced garlic, salt, and pepper.
  2. Add chicken thighs and marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-8 minutes per side, or until cooked through and slightly charred.
  5. Combine corn kernels, sliced green onions, chopped cilantro, sour cream, lime juice, lime zest, salt, and pepper in a separate bowl.
  6. Toss the corn salad gently to combine.
  7. Let chicken rest for a few minutes before slicing.
  8. Serve grilled hot honey chicken alongside the fresh corn salad.
