- 2 tablespoons hot honey
- 1 teaspoon freshly grated lemon zest
- 6 ears of sweet corn, kernels removed from the cob
- ¼ cup sour cream
- 2 tablespoons freshly squeezed lime juice
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Whisk together olive oil, hot honey, lemon zest, minced garlic, salt, and pepper.
- Add chicken thighs and marinate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-8 minutes per side, or until cooked through and slightly charred.
- Combine corn kernels, sliced green onions, chopped cilantro, sour cream, lime juice, lime zest, salt, and pepper in a separate bowl.
- Toss the corn salad gently to combine.
- Let chicken rest for a few minutes before slicing.
- Serve grilled hot honey chicken alongside the fresh corn salad.
