Description

A one-pot Mexican-inspired meal that combines tender chicken, fluffy rice, and zesty salsa verde for a flavor-packed dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Heat some oil in a large skillet over medium heat. Add the diced onions, bell pepper, and garlic; sauté until softened.
  2. Season the chicken with salt, pepper, and cumin. Add the chicken to the skillet and cook until browned on all sides.
  3. Pour in the salsa verde and chicken broth; bring to a boil.
  4. Stir in the rice, cover, and reduce heat to low. Simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
  5. Garnish with chopped cilantro before serving.

Notes
