- 1 lb boneless, skinless chicken breasts
- 1 cup salsa verde
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Heat some oil in a large skillet over medium heat. Add the diced onions, bell pepper, and garlic; sauté until softened.
- Season the chicken with salt, pepper, and cumin. Add the chicken to the skillet and cook until browned on all sides.
- Pour in the salsa verde and chicken broth; bring to a boil.
- Stir in the rice, cover, and reduce heat to low. Simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Garnish with chopped cilantro before serving.
Notes
For a healthier option, use sugar substitutes when needed. Store leftovers in an airtight container for up to 3 days.
