Ingredients

- 1 cup rolled oats
- 1/2 cup protein powder
- 1/2 cup Greek yogurt
- 1/2 cup almond milk
- 1/4 cup honey or maple syrup
- 1 cup fresh blueberries
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the rolled oats, protein powder, baking powder, baking soda, and salt.
- In another bowl, combine the Greek yogurt, almond milk, honey (or maple syrup), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the fresh blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store muffins in an airtight container for up to 5 days.
- These muffins can be frozen for up to 3 months.
- Feel free to substitute other fruits or nuts as desired.
