Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 cup olive oil
  • 1 cup chicken broth
  • Juice of 2 lemons
  • Zest of 1 lemon

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, pepper, and oregano. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides.
  4. In a separate bowl, whisk together chicken broth, lemon juice, and lemon zest.
  5. Pour the lemon sauce over the meatballs in the skillet. Bring to a simmer and cook for 15-20 minutes, until the meatballs are cooked through.
  6. Serve the meatballs with the sauce over rice or pasta, garnished with additional parsley if desired.

Notes

  • For a lighter version, you can use ground turkey instead of beef.
  • Adjust the amount of lemon juice to taste for more or less tanginess.
  • These meatballs can be made ahead of time and frozen for later use.
