- 1/2 tsp dried oregano
- 1/4 cup olive oil
- 1 cup chicken broth
- Juice of 2 lemons
- Zest of 1 lemon
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, pepper, and oregano. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides.
- In a separate bowl, whisk together chicken broth, lemon juice, and lemon zest.
- Pour the lemon sauce over the meatballs in the skillet. Bring to a simmer and cook for 15-20 minutes, until the meatballs are cooked through.
- Serve the meatballs with the sauce over rice or pasta, garnished with additional parsley if desired.
Notes
- For a lighter version, you can use ground turkey instead of beef.
