Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice and zest of 1 lemon
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes or until cooked through and golden brown.
  5. While the meatballs are baking, bring chicken broth to a boil in a saucepan.
  6. Add the orzo to the boiling broth and cook according to package instructions until al dente.
  7. Stir in lemon juice, lemon zest, and olive oil into the cooked orzo.
  8. Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.

Notes

  • For a gluten-free option, use gluten-free breadcrumbs and orzo.
  • These meatballs can be made ahead of time and frozen for later use.
