- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg

- 1 cup orzo pasta
- 2 cups chicken broth
- Juice and zest of 1 lemon
- 2 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
- Bake the meatballs for 20-25 minutes or until cooked through and golden brown.
- While the meatballs are baking, bring chicken broth to a boil in a saucepan.
- Add the orzo to the boiling broth and cook according to package instructions until al dente.
- Stir in lemon juice, lemon zest, and olive oil into the cooked orzo.
- Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.
Notes
- For a gluten-free option, use gluten-free breadcrumbs and orzo.
- These meatballs can be made ahead of time and frozen for later use.
