Description

A refreshing and flavorful dish perfect for spring, combining tender Greek chicken with zesty lemon rice.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and oregano.
  2. Add the chicken to the skillet and cook until golden brown on both sides, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Add the rice, chicken broth, lemon juice, and lemon zest to the skillet. Stir to combine.
  6. Return the chicken to the skillet, cover, and simmer for 20 minutes or until the rice is cooked and the chicken is tender.
  7. Fluff the rice with a fork and garnish with fresh parsley before serving.
