- 1 tablespoon grapefruit zest
- 1/4 cup poppy seeds
- 1/2 cup Greek yogurt or sour cream
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- Cream together the softened butter and sugar in a large bowl until light and fluffy.
- Beat in the eggs, one at a time.
- Mix in the grapefruit juice and zest until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with Greek yogurt, until just mixed.
- Fold in the poppy seeds gently.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
