- 500g beef fillet, sliced
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 250g mushrooms, sliced
- 1 tablespoon Dijon mustard
- 200ml beef stock
- 150ml sour cream
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the sliced beef and sear until browned, then remove from the pan.
- In the same pan, add the onion and garlic, cooking until softened.
- Add the mushrooms and cook until they are golden brown.
- Stir in the Dijon mustard and beef stock, bringing to a simmer.
- Return the beef to the pan and cook for a few minutes.
- Stir in the sour cream and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
