Ingredients

  • 500g beef fillet, sliced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 250g mushrooms, sliced
  • 1 tablespoon Dijon mustard
  • 200ml beef stock
  • 150ml sour cream
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the sliced beef and sear until browned, then remove from the pan.
  3. In the same pan, add the onion and garlic, cooking until softened.
  4. Add the mushrooms and cook until they are golden brown.
  5. Stir in the Dijon mustard and beef stock, bringing to a simmer.
  6. Return the beef to the pan and cook for a few minutes.
  7. Stir in the sour cream and season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, use a combination of beef stock and red wine.
  • Serve with egg noodles or rice for a complete meal.
