Ingredients

  • 1 cup gluten-free graham cracker crumbs
  • 1/2 cup almond flour
  • 1/2 cup brown sugar
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine the gluten-free graham cracker crumbs, almond flour, brown sugar, melted coconut oil, honey, vanilla extract, baking soda, and salt. Mix until well combined.
  3. Press half of the mixture into the bottom of the prepared baking dish to form the crust.
  4. Sprinkle the mini marshmallows and chocolate chips evenly over the crust.
  5. Top with the remaining cookie mixture, pressing it down gently.
  6. Bake for 20-25 minutes or until the top is golden brown.
  7. Allow to cool completely before cutting into bars.

Notes

  • Store in an airtight container for up to a week.
  • For extra chocolate flavor, drizzle melted chocolate on top before serving.
