- 1 cup gluten-free graham cracker crumbs
- 1/2 cup almond flour
- 1/2 cup brown sugar
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine the gluten-free graham cracker crumbs, almond flour, brown sugar, melted coconut oil, honey, vanilla extract, baking soda, and salt. Mix until well combined.
- Press half of the mixture into the bottom of the prepared baking dish to form the crust.
- Sprinkle the mini marshmallows and chocolate chips evenly over the crust.
- Top with the remaining cookie mixture, pressing it down gently.
- Bake for 20-25 minutes or until the top is golden brown.
- Allow to cool completely before cutting into bars.
Notes
- Store in an airtight container for up to a week.
- For extra chocolate flavor, drizzle melted chocolate on top before serving.
