Description

This garlic mushrooms cauliflower skillet is a quick, healthy side dish made with just one pan and simple ingredients. Earthy mushrooms, crisp-tender cauliflower, and savory garlic come together in under 20 minutes.


Ingredients

  • 2 tbsp olive oil
  • 3 cups cauliflower florets
  • 8 oz mushrooms, sliced
  • 4 garlic cloves, minced
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tbsp chopped parsley or thyme
  • 1 tbsp lemon juice

Instructions

  1. Cut cauliflower into small florets and slice mushrooms. Mince the garlic cloves.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add mushrooms and sauté 5–6 minutes until browned.
  3. Stir in the minced garlic and cook 30 seconds, just until fragrant.
  4. Push mushrooms to one side. Add another tbsp oil and the cauliflower florets. Let sear for 2–3 minutes before stirring.
  5. Continue cooking another 5–7 minutes until cauliflower is just tender and slightly golden.
  6. Season with salt, pepper, red pepper flakes, and lemon juice. Toss with fresh herbs and serve hot.

Notes

Don’t overcrowd your pan — use a large skillet to ensure proper browning. Add a splash of broth or lemon juice at the end for extra flavor lift. Best enjoyed fresh!
