Description
This garlic mushrooms cauliflower skillet is a quick, healthy side dish made with just one pan and simple ingredients. Earthy mushrooms, crisp-tender cauliflower, and savory garlic come together in under 20 minutes.
Ingredients
Scale
- 2 tbsp olive oil
- 3 cups cauliflower florets
- 8 oz mushrooms, sliced
- 4 garlic cloves, minced
- ½ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 tbsp chopped parsley or thyme
- 1 tbsp lemon juice
Instructions
- Cut cauliflower into small florets and slice mushrooms. Mince the garlic cloves.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add mushrooms and sauté 5–6 minutes until browned.
- Stir in the minced garlic and cook 30 seconds, just until fragrant.
- Push mushrooms to one side. Add another tbsp oil and the cauliflower florets. Let sear for 2–3 minutes before stirring.
- Continue cooking another 5–7 minutes until cauliflower is just tender and slightly golden.
- Season with salt, pepper, red pepper flakes, and lemon juice. Toss with fresh herbs and serve hot.
Notes
Don’t overcrowd your pan — use a large skillet to ensure proper browning. Add a splash of broth or lemon juice at the end for extra flavor lift. Best enjoyed fresh!
