- 2 medium eggplants, cut into bite-sized pieces
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, chopped
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the eggplant pieces and stir-fry for about 5-7 minutes until they start to soften.
- In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, sugar, and red pepper flakes.
- Pour the sauce over the eggplant and stir well to coat.
- Continue to cook for another 5 minutes until the eggplant is tender and the sauce has thickened.
- Remove from heat and stir in the chopped green onions.
- Serve hot over rice or noodles.
Notes
- For a spicier version, increase the amount of red pepper flakes.
- Make sure to choose firm eggplants for the best texture.
