Description

A delicious and easy stir-fry recipe featuring tender eggplant infused with garlic and savory flavors.


Ingredients

  • 2 medium eggplants, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, chopped


Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the eggplant pieces and stir-fry for about 5-7 minutes until they start to soften.
  4. In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, sugar, and red pepper flakes.
  5. Pour the sauce over the eggplant and stir well to coat.
  6. Continue to cook for another 5 minutes until the eggplant is tender and the sauce has thickened.
  7. Remove from heat and stir in the chopped green onions.
  8. Serve hot over rice or noodles.

Notes

  • For a spicier version, increase the amount of red pepper flakes.
  • Make sure to choose firm eggplants for the best texture.
