Description

A vibrant and delicious Fresh Fruit Tart topped with creamy vanilla custard, perfect for any celebration.


Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • ¼ tsp salt
  • 1 large egg yolk
  • ¼ cup ice-cold water
  • 2 cups whole milk
  • ¾ cup granulated sugar (divided)
  • 6 large egg yolks
  • 2 tsp pure vanilla extract
  • 2 cups mixed seasonal fruits (e.g., strawberries, kiwis, blueberries)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, sugar, and salt in a bowl.
  3. Cut in cold butter until crumbly.
  4. Add egg yolk and ice water; mix until dough forms.
  5. Press dough into a tart pan evenly.
  6. Bake for 20 minutes until golden brown.
  7. Let cool.
  8. Warm milk and half the sugar in a saucepan over medium heat.
  9. Whisk remaining sugar with egg yolks until pale.
  10. Gradually add warm milk to yolks while whisking continuously to prevent scrambling.
  11. Return mixture to the saucepan and stir over low heat until thickened (8-10 minutes).
  12. Remove from heat and stir in vanilla extract; cool before pouring into the crust.
  13. Arrange sliced fruits artistically on top of the custard.

Notes

For a flakier crust, chill the dough before rolling. Use fresh, seasonal fruits for the best flavor.
