- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups Fritos corn chips
- 1 cup shredded cheese (cheddar or Mexican blend)
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the chopped cabbage to the skillet and cook until it begins to soften.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning. Mix well and let simmer for about 10 minutes.
- In a serving dish, layer the beef and cabbage mixture, then top with Fritos and shredded cheese.
- Serve warm and enjoy!
