Description
A refreshing and easy-to-make Frito Corn Salad perfect for spring dinners and cookouts.
Ingredients

- 1 can of corn, drained
- 1 can of black beans, rinsed and drained
- 1 cup of diced bell peppers
- 1 cup of diced tomatoes
- 1 cup of shredded cheese
- 1 cup of Fritos corn chips
- 1/2 cup of mayonnaise
- 1 tablespoon of lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the corn, black beans, bell peppers, tomatoes, and cheese.
- In a separate bowl, mix together the mayonnaise, lime juice, salt, and pepper.
- Pour the dressing over the salad mixture and stir until well combined.
- Just before serving, fold in the Fritos corn chips to maintain their crunch.
- Serve chilled or at room temperature.
