Description

A refreshing and easy-to-make Frito Corn Salad perfect for spring dinners and cookouts.


Ingredients

Scale
  • 1 can of corn, drained
  • 1 can of black beans, rinsed and drained
  • 1 cup of diced bell peppers
  • 1 cup of diced tomatoes
  • 1 cup of shredded cheese
  • 1 cup of Fritos corn chips
  • 1/2 cup of mayonnaise
  • 1 tablespoon of lime juice
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the corn, black beans, bell peppers, tomatoes, and cheese.
  2. In a separate bowl, mix together the mayonnaise, lime juice, salt, and pepper.
  3. Pour the dressing over the salad mixture and stir until well combined.
  4. Just before serving, fold in the Fritos corn chips to maintain their crunch.
  5. Serve chilled or at room temperature.
