- ½ cup plain or vanilla yogurt
- 1 cup granulated sugar
- 1½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ cup vegetable oil or applesauce
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350℉ / 180℃ and grease or line a 9-inch round pan.
- Add the yogurt into a large bowl.
- Add eggs, sugar, vanilla extract, and ½ cup oil or applesauce to the yogurt and whisk to combine.
- Wash and dry the yogurt cup, then add the flour and baking powder, mixing well.
- Fold in up to ½ cup of fruit if desired.
- Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake completely on a wire rack before cutting and serving.
Notes
For a healthier twist, swap vegetable oil with applesauce. This cake can be dressed up with seasonal fruits.
