Instructions

  1. Preheat oven to 350℉ / 180℃ and grease or line a 9-inch round pan.
  2. Add the yogurt into a large bowl.
  3. Add eggs, sugar, vanilla extract, and ½ cup oil or applesauce to the yogurt and whisk to combine.
  4. Wash and dry the yogurt cup, then add the flour and baking powder, mixing well.
  5. Fold in up to ½ cup of fruit if desired.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the cake completely on a wire rack before cutting and serving.

Notes

For a healthier twist, swap vegetable oil with applesauce. This cake can be dressed up with seasonal fruits.
