Ingredients

- 2 pounds beef chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 hoagie rolls
- Provolone cheese (optional)
Instructions
- Season the beef chuck roast with salt and pepper.
- In a large pot, heat some oil and brown the roast on all sides.
- Add the sliced onion and minced garlic, cooking until fragrant.
- Pour in the beef broth, water, Worcestershire sauce, and thyme.
- Bring to a boil, then reduce heat and simmer for 3-4 hours until the beef is tender.
- Remove the beef, shred it, and return it to the pot to soak in the juices.
- Toast the hoagie rolls and fill them with the shredded beef.
- Top with provolone cheese if desired and serve with au jus for dipping.
Notes
- For extra flavor, marinate the beef overnight.
- Serve with a side of fries or a salad for a complete meal.
- Leftover au jus can be stored in the refrigerator for up to 3 days.
