- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chopped mushrooms and cook until they are soft and any moisture has evaporated.
- In a bowl, mix the cooked mushrooms with cream cheese and Parmesan cheese. Season with salt and pepper.
- Cut a pocket in each chicken breast and stuff with the mushroom mixture.
- Place the stuffed chicken breasts in a baking dish and season the tops with salt and pepper.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
