Description

A vibrant pasta salad filled with fresh vegetables, black beans, and a zesty lime dressing, perfect for gatherings.


Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine black beans, cherry tomatoes, corn, bell pepper, avocado, red onion, and cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  4. Add the cooled pasta to the large bowl of vegetables and beans, then pour the dressing over the top.
  5. Toss everything together until evenly coated.
  6. Serve immediately or refrigerate for later. Enjoy at picnics or potlucks!
