- 8 oz pasta (fusilli or rotini)
- 1 can black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cup corn (fresh or frozen)
- 1 bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, then drain and let cool.
- In a large bowl, combine black beans, cherry tomatoes, corn, bell pepper, avocado, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
- Add the cooled pasta to the large bowl of vegetables and beans, then pour the dressing over the top.
- Toss everything together until evenly coated.
- Serve immediately or refrigerate for later. Enjoy at picnics or potlucks!
