Ingredients

  • 8 oz rigatoni pasta
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely chopped

  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the rigatoni pasta according to package instructions until al dente. Drain and let cool.
  2. In a large bowl, combine the cooled rigatoni, feta cheese, dried cranberries, red onion, and walnuts.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine.
