Description

A delightful and savory egg dish perfect for a spring dinner.


Ingredients

Scale
  • 6 large eggs
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the ricotta cheese, Parmesan cheese, basil, salt, and pepper.
  3. Grease a baking dish with olive oil.
  4. Layer the halved cherry tomatoes at the bottom of the dish.
  5. Pour the cheese mixture over the tomatoes.
  6. Crack the eggs on top of the cheese mixture.
  7. Bake in the preheated oven for 20-25 minutes, or until the eggs are set.
  8. Remove from the oven and let it cool slightly before serving.
