A delightful and savory egg dish perfect for a spring dinner.
Ingredients

- 6 large eggs
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the ricotta cheese, Parmesan cheese, basil, salt, and pepper.
- Grease a baking dish with olive oil.
- Layer the halved cherry tomatoes at the bottom of the dish.
- Pour the cheese mixture over the tomatoes.
- Crack the eggs on top of the cheese mixture.
- Bake in the preheated oven for 20-25 minutes, or until the eggs are set.
- Remove from the oven and let it cool slightly before serving.
