Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon paprika

  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice

Instructions

  1. In a bowl, mix together the cumin, coriander, paprika, turmeric, cinnamon, garlic, olive oil, lemon juice, salt, and pepper.
  2. Add the chicken thighs to the slow cooker and pour the spice mixture over them, ensuring they are well coated.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  4. Once cooked, shred the chicken with two forks and mix it with the juices in the slow cooker.
  5. Serve the chicken in pita bread with fresh vegetables.
