Description

A simple and delicious recipe for mini eggplant pizzas, perfect for a healthy snack or appetizer.


Ingredients

  • 2 medium eggplants
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants into 1/2 inch thick rounds.
  3. Place the eggplant slices on a baking sheet and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
  4. Rinse the eggplant slices and pat them dry with a paper towel.
  5. Spread a layer of marinara sauce on each eggplant slice.
  6. Top with shredded mozzarella and grated Parmesan cheese.
  7. Sprinkle Italian seasoning, salt, and pepper on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh basil leaves before serving.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
  • These can be made ahead of time and reheated in the oven.
