- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (15 ounces) diced tomatoes
- 1 teaspoon Italian seasoning
- 8 ounces lasagna noodles, broken into pieces
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef, onion, and garlic; cook until the meat is browned and the onion is translucent.
- Stir in chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil.
- Add the broken lasagna noodles and cook until tender, about 10 minutes.
- Reduce heat and stir in heavy cream and Parmesan cheese until melted and creamy.
- Add chopped spinach and cook until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with additional Parmesan if desired.

- For a vegetarian version, substitute ground beef with mushrooms or lentils.
