Description

A healthy and delicious baked dish featuring chicken and zucchini, perfect for meal prep and easy weeknight dinners.


Ingredients

Scale
  • 2 medium zucchinis, sliced
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchinis, cubed chicken, cherry tomatoes, olive oil, garlic powder, Italian seasoning, salt, and pepper.
  3. Spread the mixture evenly in a baking dish.
  4. Top with shredded mozzarella cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
  6. Let it cool for a few minutes before serving.
