Description

Duchess Potatoes are a classic French dish made from mashed potatoes that are piped into elegant shapes and baked until golden.


Ingredients

  • 2 pounds of potatoes
  • 4 tablespoons of unsalted butter
  • 1/2 cup of heavy cream
  • 2 large egg yolks
  • Salt to taste
  • Black pepper to taste
  • 1/4 teaspoon of nutmeg (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the potatoes into chunks, then boil them in salted water until tender.
  3. Drain the potatoes and return them to the pot.
  4. Add butter, heavy cream, egg yolks, salt, pepper, and nutmeg to the potatoes.
  5. Mash the mixture until smooth and creamy.
  6. Transfer the potato mixture to a piping bag fitted with a star tip.
  7. Pipe the potatoes into decorative shapes on a baking sheet.
  8. Bake in the preheated oven for about 20-25 minutes or until golden brown.
