Description

Learn how to make Duchess Potatoes, a classic French dish that combines elegance with creamy potato goodness.

Ingredients

Scale
  • 2 pounds of Yukon Gold potatoes
  • 4 tablespoons of unsalted butter
  • 1/2 cup of heavy cream
  • 2 large egg yolks
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 teaspoon of nutmeg (optional)

Instructions

  1. Peel and cut the potatoes into chunks, then boil them in salted water until tender.
  2. Drain the potatoes and return them to the pot over low heat to evaporate excess moisture.
  3. Add butter, heavy cream, egg yolks, salt, pepper, and nutmeg to the potatoes, then mash until smooth and creamy.
  4. Transfer the mixture to a piping bag fitted with a star tip.
  5. Pipe the potato mixture onto a baking sheet lined with parchment paper in decorative shapes.
  6. Preheat the oven to 400°F (200°C) and bake the potatoes for about 20-25 minutes or until golden brown.
  7. Serve warm as a side dish.

Notes

  • For a richer flavor, you can add grated cheese to the potato mixture.
  • Make sure the potatoes are well-drained to avoid a watery mixture.
  • These can be made ahead of time and reheated in the oven before serving.
