Description

A creamy and vibrant pasta salad combining elbow macaroni and deviled eggs, perfect for gatherings and summer picnics.


Ingredients

  • 8 oz elbow macaroni
  • 6 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 cup sweet relish
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Paprika for garnish
  • Chives for garnish


Instructions

  1. Cook the elbow macaroni according to the package instructions. Drain and cool.
  2. Combine in a large mixing bowl the chopped hard-boiled eggs, mayonnaise, Dijon mustard, apple cider vinegar, sweet relish, celery, and red onion.
  3. Add the cooled macaroni to the mixture and stir to combine.
  4. Season with salt and pepper to taste.
  5. Transfer to a serving dish and garnish with paprika and chives.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Make-ahead for best flavor. Adjust seasoning to taste. Skip chilling at your own risk!
