Ingredients

  • 1 package wonton wrappers
  • 1 cup cooked chicken or tofu, diced
  • 1 can coconut milk
  • 4 cups vegetable or chicken broth
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 cup vegetables (like bok choy, carrots, or bell peppers)
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. Heat some oil in a large pot over medium heat. Add garlic and ginger, and sauté until fragrant.
  2. Stir in curry powder and cook for another minute.
  3. Add vegetable or chicken broth and coconut milk, and bring to a simmer.
  4. Mix in diced chicken or tofu, vegetables, soy sauce, and season with salt and pepper. Let it simmer for about 10 minutes.
  5. Prepare the wontons by filling the wrappers with a small amount of the protein and sealing them.
  6. Cook the filled wontons in boiling water for about 3-4 minutes or until they float.
  7. Serve the soup in bowls with wontons added and garnish with green onions.
