Description

A refreshing and healthy salad perfect for spring dinners.


Ingredients

Scale
  • 2 cups of sliced cucumbers
  • 2 cups of sliced strawberries
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of fresh mint leaves, chopped
  • 1/4 cup of feta cheese, crumbled
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the sliced cucumbers, strawberries, red onion, and mint leaves.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Sprinkle the feta cheese on top before serving.
  5. Serve chilled or at room temperature.
