Description

Delightfully fresh and vibrant sandwiches filled with creamy cheese and crisp cucumbers, perfect for picnics or light lunches.


Ingredients

  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 8 slices of bread
  • Lettuce leaves (optional)


Instructions

  1. Combine softened cream cheese, chopped dill, lemon juice, salt, and pepper in a bowl. Mix until well combined.
  2. Spread the cream cheese mixture evenly over the slices of bread.
  3. Layer cucumber slices on half of the bread slices.
  4. Top with lettuce leaves if desired, then cover with the remaining bread slices.
  5. Cut sandwiches into halves or quarters and serve immediately or chill until ready to serve.

Notes

Best enjoyed fresh but can be stored in an airtight container for up to 2 days. Avoid using wet cucumbers to prevent sogginess.
