Description

A refreshing twist on the classic Caprese salad, featuring crisp cucumbers, fresh mozzarella, and ripe tomatoes.


Ingredients

Scale
  • 2 large cucumbers
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, cubed
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Wash and slice the cucumbers into thick rounds.
  2. In a large bowl, combine the cucumber slices, cherry tomatoes, and mozzarella cubes.
  3. Add the fresh basil leaves to the bowl.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Season with salt and pepper to taste.
  6. Toss gently to combine all ingredients.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving.
