Description

A delightful dish of chicken coated in crispy shredded coconut and breadcrumbs, baked to perfection.


Ingredients

Scale
  • 2 pounds Chicken pieces
  • 1 cup Shredded coconut
  • 1 cup Bread crumbs
  • 2 Eggs
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Beat the eggs with salt and pepper in a bowl.
  3. Mix shredded coconut and bread crumbs in another bowl.
  4. Dip each chicken piece into the egg mixture, then coat with the coconut-bread crumb mixture.
  5. Place coated chicken on a baking sheet and drizzle with olive oil.
  6. Bake for 25-30 minutes or until golden and crispy. Serve warm as an appetizer or main course.

Notes

For extra crunch, double dip the chicken and consider adding spices to the bread crumb mixture.
