Description

Ingredients

  • 2 lbs chicken breasts
  • 1 cup peanut butter
  • 1/2 cup soy sauce
  • 1/2 cup coconut milk
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Place the chicken breasts in your slow cooker.
  2. Mix together the peanut butter, soy sauce, coconut milk, honey, lime juice, garlic, ginger, and red pepper flakes (if using) in a separate bowl.
  3. Pour the peanut sauce over the chicken in the slow cooker.
  4. Cook on low for 360 minutes or on high for 240 minutes until the chicken is tender.
  5. Shred the chicken in the slow cooker and stir to coat it in the sauce.
  6. Add salt and pepper to taste and serve hot, garnished with chopped cilantro.

Notes

For a sugar-free option, consider using stevia, monk fruit, or allulose instead of honey.
