Description

A comforting and flavorful dish made with slow-cooked pinto beans, perfect for burritos, nachos, or as a side.


Ingredients

  • 2 cups dried pinto beans
  • 5 cups water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • Lime juice (optional)
  • Chopped cilantro (optional)


Instructions

  1. Rinse the pinto beans and soak them overnight or for at least 8 hours in water.
  2. Drain the beans and place them in the crockpot.
  3. Add the chopped onion, minced garlic, cumin, and water to the crockpot.
  4. Cook on low for 8-10 hours or until the beans are tender.
  5. Mash the beans with a fork or potato masher to your desired consistency.
  6. Season with salt, pepper, lime juice, and cilantro if desired.
  7. Serve warm as a side dish or as a filling for burritos and tacos.
