Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup uncooked pasta (elbow or penne)
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)


Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion and minced garlic to the skillet and sauté until softened.
  3. Transfer the beef mixture to the crockpot.
  4. Add the black beans, corn, diced tomatoes, uncooked pasta, beef broth, chili powder, cumin, salt, and pepper to the crockpot.
  5. Stir everything together until well combined.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. If using, sprinkle shredded cheese on top during the last 30 minutes of cooking.
  8. Serve hot and enjoy your comforting casserole!
