- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup uncooked pasta (elbow or penne)
- 2 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet and sauté until softened.
- Transfer the beef mixture to the crockpot.
- Add the black beans, corn, diced tomatoes, uncooked pasta, beef broth, chili powder, cumin, salt, and pepper to the crockpot.
- Stir everything together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- If using, sprinkle shredded cheese on top during the last 30 minutes of cooking.
